Thumbprint Sugar Cookies


Ingredients:
  •  2 & 3/4 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter
  • 1 cup & 2 tbsp granulated sugar
  • 2 tbsp brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • jam (of your choice)

Instructions:
1. Preheat oven to 350 degrees Fahrenheit. Line your baking sheet with parchment paper or grease with butter, oil, or nonstick cooking spray.
2. Mix together flour, baking soda, baking powder, and salt in a bowl. Set aside for later. (These are your dry ingredients.)
3. Cream together sugars and butter in a large bowl, mixing on medium speed until the mixture is light in color and fluffy. 
4. Add egg, then vanilla extract and mix well.
5. Add dry ingredients to large mixing bowl, mix until thick and not sticky. Do not over blend, too much mixing will make your cookies tough.
6. Roll dough into balls, of about a 1-2 inch diameter, roll them in a sprinkle of granulated sugar, and set on your baking sheet.


7. With clean hands, press a thumbprint indentation into each of the balls. Fill the indentation with a spoonful of jam.
8. Bake for about 7 minutes, remove from oven before cookies turn golden. (Cooking time may vary, keep checking in on them!)
9. Allow to cool before transferring to metal rack or plate.
